"One Day at a Time, 2015” .....Meals on the Road

I thought that I would show  you some of the meals that I have cooked so far.  Bruce is not one of those men who like to grill, so I often fix crock pot meals or use my Farberware skillet that was a wedding gift from my mother-in-law 50 years ago in August.  

I do have a microwave/convection oven, and at the "sticks and bricks" house, I tend to use the microwave a lot.  Here in our rolling RV, I tend to use the electric skillet.

I boast about only use my range top once!  Kinda crazy, I know.  Just as crazy, I suppose, as using my dishwasher for storage!!  Oh well, to each his own!


Swiss steak with farm stand butternut squash

Cabbage salad, Applesauce, Rice and Baked Chicken

Pot Roast, Mashed Potatoes, Peas and Applesauce

A concoction of mixed vegetables and baby onions with baked Pork Chops and Applesauce
Carrots/Parsnips/Sweet Potatoes, Pulled BBQ Chicken and Wilted Spinach with Mushrooms and Onions

Parsnips, Baked Chicken and Spinach Salad (mine-not Costco's)
Steak (grilled outside!), Sweet Potato, Wilted Spinach and Applesauce
Tilapia, Lentils and beans and Mixed Vegetables (Sweet Potatoes, Orange and Yellow Carrots, Parsnips and Red Onions)

Good meals with simple preparation and very little clean-up.

And why, you ask, don't I use the dishwasher?  I've discovered that if I manually do the dishes, I will get right up after dinner and get them done.  I air dry them and just before bedtime, I put them away.  Like I've said before, when you're in close quarters, you learn to keep things picked up and in their place.
